Most cooks don't like people watching them at work. Is it really true that they don't want to show us their recipes or reveal the tricks of their trade? Perharps this tickles their vanity, but we're quick to forgive them when they give evidence of their delectable imagination. Why would one want to know what is going on backstage when the evidence is sublime? However, we don't like surprises on our own dining table. We have every right to be demanding and want to know where the items we buy come from and what they contain. Furthermore, we want to be assured that they are fresh and receive instructions for use. It is in their own interest that the industrial chefs have no secrets from us and do not haggle over excellence and inspection of their products. The Dutch specialists in potato processing open their doors and invite us to methodically follow the procedures for preparing precooked French fries, chips, purees... and without restraint specify their quality requirements.
